Founded in 2015, Cafe Cabra Verde in Ahuachapan, El Salvador,  stands as an example of artisanal Salvadoran coffee. Our farm,  owned by Brian and Ellyn Dubberly, meticulously nurtures coffee from seed to cup, sharing the art of coffee production with our community. Brian and Ellyn had never considered the idea of becoming coffee farmers. Both serve as missionaries in Ahuachapan and have made this small city their home. Their intention was to locate a small parcel of land to construct a house. A family friend recommended that they explore a property located on the outskirts of town. Although it was a significantly larger piece of land than they initially intended to purchase, they fell in love with the predominantly forested area. The land was previously a coffee farm, so it felt appropriate to attempt to cultivate it with new plants. Thus, Cafe Cabra Verde was established, and we have been nurturing the land ever since. Cafe Cabra Verde is dedicated to quality, our farm prides itself on offering single-origin, direct-marketed coffee, where every sip reflects our passion for coffee excellence.

Decarative Ripe Coffee Cherries

The varieties of coffee available at Café Cabra Verde are distinct from the typical varieties found in the Ahuachapan region. Most of our coffee trees consist of the Catimor and Pacas varieties. Recently, we have also planted Costa Rica 95 and San Pacho. We have deliberately chosen to plant multiple varieties to provide a coffee with a more intricate body and flavor compared to the majority of coffees available in El Salvador. Our aim was to present a coffee that stands out among the offerings in El Salvador and Central America.

Catimor is a hybrid of Timor coffee and Caturra coffee. This new coffee variety was developed in 1957 by a group of agricultural scientists from Portugal, aiming to create a coffee plant that yields abundantly and is resistant to leaf rust and other pests. Catimor coffee is a result of breeding both robusta and arabica coffees, with the intention of harnessing the best characteristics of each type. It benefits from the hardiness and pest resistance of the robusta lineage while adopting the smoother and less bitter flavor profile of the arabica lineage. As a blend of robusta and arabica, it presents a complex array of flavors, including ripe berries, herbal notes, nutty undertones, and cherry. This intricate flavor profile makes it a popular choice among coffee drinkers, showcasing the advantages of both coffee types. While it predominantly features fruity notes characteristic of arabica, the nutty hints are distinctly robusta.

Pacas is a natural mutation of Bourbon, akin to Caturra in Brazil and Villa Sarchi in Costa Rica. This variety was identified in 1949 on a farm owned by the Pacas family in the Santa Ana region of El Salvador. Pacas coffee is celebrated for its rich and varied flavor profile, typically offering a medium body, balanced acidity, and a blend of tasting notes that may include nutty, fruity, and chocolatey undertones.
